Tuesday is here, and I have a new recipe for you guys to try out. If you like sweet and spicy then these are the energy balls for you! I came across this recipe the other day and loved that it combined warm spices like cinnamon, ginger, and even cayenne pepper. If you have ever had spicy hot chocolate (also called Mexican hot chocolate), then you will love the flavour combination here.
Bonus: They are super easy to make! Throw everything together in your food processor (or do smaller batches in a blender) and voila! Mexican hot chocolate energy balls.
1 cup raw almonds
1/4 cup sunflower seeds
2 tablespoons chia seeds
6 dates (I soaked mine in water prior to blending, but this is optional. It just makes them softer)
1 teaspoon coconut oil
3 tablespoons cocoa powder
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon vanilla
2 teaspoons maple syrup
Generous pinch of cayenne pepper, black pepper & paprika
I found these dates at Costco the other day. It is a huge bag, and I have made another little dessert with them too – coming to a blog near you, soon! While you don’t necessarily have to soak the dates as mentioned above, I do suggest it especially if you find the dates are hard and not easily pliable.
Add everything into your food processor and blend until it forms a sticky dough, then form into balls.
These are great to take as a portable snack, and are a good way to get in some quick carbs before you start a workout. I had two before my 8 miler on Saturday and it did the trick to give me some easy energy. The great thing about energy balls is that they are so versatile and you can really have fun with your ingredients. Plus, who doesn’t love easy recipes? One bowl and you are done. Maybe a few measuring cups (who really uses measuring spoons?) but that’s it. Easy recipe, easy clean up. Done!
