Recipe: Matcha Maca Energy Balls

Good morning!

It is my Sunday today even though it’s Monday. I love that! Sometimes having an extra day off can be exactly what you need to reset, refocus & get in gear for the week ahead. Today I wanted to share a recipe I concocted that includes tons of superfoods. I am all for trying new ingredients, so this one includes something I don’t think I’ve showcased on the blog yet – MACA!

So, what is maca? I am going to do a blog post all about this superfood later on, but here’s a short list of it’s many benefits:

Improves skin, hair & nail health

Contains vitamins such as vitamin B, C, E

Contains minerals like iron, zinc, calcium, magnesium

Mood balancing

Good for women’s health

So, let’s get into the actual recipe!

You will need:

1 cup cashews

1 cup pitted dates

1 1/2 – 2 tsp matcha powder

1 tsp maca powder

A small splash of vanilla

1/2 tbsp coconut oil

The matcha that I use also has some coconut sugar in it for extra sweetness. Not a ton, but enough to make a matcha latte (or your energy balls in this case) sweeter!

Step one: Add all of your ingredients aside from the maca, matcha, and coconut oil. Pulse this until it forms a sticky crumble consistency. You want to make sure that it sticks together when you press the mixture between your fingers. This is the base of the energy ball.

Step two: Once you have your dates and cashews looking a little like so, go ahead and add in the maca powder, matcha powder, and coconut oil. Then blend it all up!

Step three: Once everything is mixed in, form them into bite-sized balls and keep in the fridge. I packed a few to work each day for a mid-afternoon snack once my sweet tooth hits. Plus, the matcha and maca are so energizing, and these energy balls are filled with protein and fats to keep you fueled! You can use these as pre-workout fuel too. They are easy to make and easy to take on the go! : )

Enjoy!
