RECIPE: Coconut Energy Bites

How’s the week going so far? I was extra prepared on Sunday and did some meal prep. It has been a little while since I spent a few hours in the kitchen getting a head start on food for the week, but it felt so good to get on track!

I wanted to share some ridiculously easy energy bites I made on Sunday. They are great on-the-go fuel, pre-run or pre-workout fuel, or good to take to work as an afternoon snack when that mid-day sweettooth kicks in. Bonus: These energy bites are free of added sugar and you can pronounce every single ingredient that goes into them. If you know me, you know I’m into this! The simpler the better.

You will need:

10 pitted dates

1/4 cup GOOD quality maple syrup

About 2 tbsp local honey (none of that grocery store junk sold in a Bear shape, if you know what I mean)

1 tbsp almond butter (or you can do peanut butter if you prefer)

1/2 cup sunflower seeds

1 cup large flake rolled oats

1/2 cup finely shredded unsweetened coconut

About a table spoon of hot water to add in as it is mixing. This just helps soften up the dates and helps it mix better.

I threw all the ingredients into my food processor and let it mix on high until it was combined and a sticky “dough” began to form. Roll into balls, and then roll in more unsweetened shredded coconut mixed with cinnamon.

It’s that easy! Enjoy with a cuppa coffee or tea & you are all set : ) Hope you enjoy your day!
