I hope you are all having a great week so far. Has anyone felt like this week has been longer than usual? Maybe it’s because I have stayed later at work a few days and had an early start on Tuesday. Busy, busy, busy! Either way, I’m looking forward to the weekend, that’s for sure!
I wanted to share a super easy dinner recipe with you guys. In fact, it’s not even really a recipe because it is a pre-made package of chili. No, there’s no weird ingredients in it. It is by Mitchell’s Soup Company (this may just be a Vancouver Island thing, but if you can find them at your grocery store then you will love them!) and it is essentially all the ingredients you need for chili, minus any meat or veggies. I added leeks, a small potato, stewed tomatoes, and carrots to our chili when I put it in the slow cooker yesterday morning, so all that needed to be cooked was the ground turkey after work. It is so nice to have a meal ready after the work day is done, and it was perfect because it was DOWN POURING so hard last night & a warm, comforting meal was in order : ) I topped mine with some Daiya dairy-free shredded “cheese” and Ryan had regular cheese on his. Easy, peasy!
And like the adults we are, we ate our chili while watching Finding Nemo. It’s a classic!
I also wanted to give you a bit of an update on the running front. If you didn’t guess already, I have been making excellent use out of the best treadmill set up EVER. Not to toot my own horn or anything, but I have been a rockstar at waking up early the last two weeks and getting my workout in before the work day begins. Okay, I’ll do it. TOOT TOOT! It feels so nice to know that you can just head home after the day is done and not have to worry about fitting time in to workout amongst all the other every day chores. Yesterday I ran 7.2 miles while catching up on YouTube and beating the rain. I’m all for training in a variety of weather, but when you’re half asleep at 5:20am and it’s pouring rain and dark outside, sometimes you just wanna get your run on where it’s dry!
On another note, if you missed it you may not know that I signed up for my first FULL MARATHON which takes place in October. Yeah, I’m nervous just thinking about it, but I know that I have been working hard at building my base this winter. This will make training so much easier come May when the time comes to really jump in and start the marathon training plan. I have been increasing my mileage by about 10% each week – this is kind of the magic number if you are looking to increase mileage without injury, and so far I feel good. I can attribute this to the stretching and foam rolling I have been pretty damn consistent with. Yep, that’s another *toot toot.* Amazing what a little post-run recovery can do for you! Yes, this includes massage therapy and epsom salt baths. Injury prevention is going to be a big focus as part of my training plan, as well as getting myself accustomed to longer distances, more time on my feet, core, and strength work. Little by little it’ll all add up to big things – 42.2km big!
